2 Tbs oil or oil 1 Tbs + 1 Tbs butter / ghee
3 cloves of garlic, minced
2 Tbs tomato paste
2 cups of water
1/2 tsp salt
1/4 tsp pepper


 Over medium high heat, preheat the oil in a saucepan.
  Add the garlic and stir fry the garlic up to turn dark yellow.
Add the tomato paste and mix well for 2 minutes and up to the tomato paste Separates from the oil.
Add the water, salt and pepper. Mix well and bring to a boil.
Lower the heat, cover the saucepan and let the sauce simmer for about 10 minutes.
  The sauce is now ready to be used in any recipe calling for it.
