1 tablespoon olive oil
1 medium onion, finely chopped
1 cup lentils
1 cup water
1/4 teaspoon pepper
1/4 teaspoon cumin
2 cups water
2 cups long grain white rice
1/2 teaspoon salt

Directions:

1 Heat oil in pan, add onion and fry for 3 minutes

2 Add lentils, water, pepper and cumin

3 Bring to a boil and simmer for 5 minutes. Add 2 cups water and bring to a boil

 4  Add rice and salt and continue to boil

Then reduce heat to low, cover the pan and simmer for 15 minutes

6 Remove from heat and let sit for 10 minutes. Serve.
